(Makes 1.5 litres approx)
juice of 12 lemons
Grated zest from 1 lemon
1/2 litre water
Put all of the ingredients in a pan and slowly bring to the boil, stirring regularly. When it begins to boil, reduce the heat and simmer gently for 20 minutes.
Allow to cool a little and decant into a glass bottle.
put ice (and fresh mint in a glass if you want) dilute 1 part syrup to 5 parts water. Sit in the sunshine and enjoy 🙂
