Dina’s Zucchini Tiropita (Dina’s Courgette and Cheese “Pie”)

Sometimes you come across a recipe that just works. Simple and delicious. This is one of them.

This comes from the Northern Peloponnese and I had it for breakfast after making new friends.

2 medium zucchini, grated and pressed to remove the liquid
250g Feta
1 onion finely chopped
3 garlic cloves, finely chopped
Fresh Parsley, mint
2 eggs
150g flour
Salt and pepper
Sesame seeds

<Mix all the ingredients together (the consistency should be like a cake batter), and pour the batter into a square cake tin. Sprinkle with sesame seeds and bake in a preheated oven, 200 for 45 minutes – 1 hour.
